500ml Tomato juice
100g grated Parmesan cheese

Yesterday I wanted to cook a sophisticated dinner. I chose to prepare eggplant slices in tomato sauce. For extra flavor I added minced meat. It was an incredibly tasty dinner. You can try my special recipe!
I cut the eggplant into 1 cm slices. I sprinkled with salt the eggplant. After 30 minutes I washed under cold water eggplants and I’ve left it to dry on a napkin.
I cut onions and put it in the pan over medium heat with a little olive oil and water. After 10 minutes I added peppers. Over 10 more minutes I poured tomato juice and let simmer one hour. After this time I sprinkled basil, oregano, garlic, salt and pepper. I let the sauce simmer another 10 minutes.
In a tray I arranged the eggplant slices with minced meat. I poured the sauce over and sprinkle grated Parmesan cheese.
It stayed for 20 minutes at 180 degrees in the oven.
