Ingredients for the dough:
500 g Flour
3 egg Yolks + 1 egg Yolk for smearing
250 ml of Milk
35g fresh Yeast
100 g Butter
120 g Sugar
150 g Raisins
peel from an Orange bio
peel from a Lemon bio
seeds from a pod of Vanilla
1 teaspoon Salt

3 egg Whites
300 g ground Nuts
200 g of Rose jam

Kozunak is a traditional Bulgarian and Romanian sweet. This dessert is prepared mostly at religious holidays.
Christmas reminds me of grandparents. The holidays that I spent at him were most beautiful. We gather all around the stove and were singing while my Grandma put the dishes on the table. Now I can just remember the great taste of Christmas bread with rose jam that my grandmother was preparing. She had a few bushes roses in the garden. She carefully was picking the fragrant petals and made them jam. Although my grandmother is no longer with us, the taste of Christmas bread with rose jam will always reminds me of her. I confess that this is the first time I made this dessert, but I can say that it’s perfect. The Christmas bread with rose jam I will have at Christmas dinner.
First you need to soak the yeast in a little milk, a teaspoon of sugar and a little flour. It should be a creamy mixture. Let the mixture stand a few minutes until starting to swell.
Leavened yeast mix with sifted flour and remaining ingredients and put everything in the bread machine at kneading program. I kneaded the dough 2 times to assure me that I will have a fluffy cake. Same thing I recommend you to do it too. Let dough rise in a warm place for an hour and a half.
Meanwhile prepare the filling. Beat egg whites into the perfect airy foam. Mix the foam with ground nuts and rose jam. If the mixture is too thick, add a little milk.
When the dough has doubled its volume, put it on the table and divide it into two equal parts. Each piece stretch with rolling pin and put over the filling.
Roll the two pieces of dough and put them on one another as shown below.
Put the stuffed dough in baking pan covered with parchment paper. Preheat the oven to 70 degrees and then stop it. Cover the baking pan with a towel and leave it in the oven an hour.
After this time Preheat oven to 180 degrees. Beat egg yolks and smear over cake. Bake Christmas bread with rose for 60 minutes. Bon appetite!
