1 large onion
a piece of celery
1 large potato

I like mushrooms because they quickly prepare and give a special flavor to the food. In our house is customary creamy mushroom soup. It’s the dish that I cook quickly. I just need a few minutes to cut the vegetables and boil them.
This creamy mushroom soup combines perfectly with cold weather. Enjoy it!
I washed and peeled onion, carrot, celery and potato. I washed and dried on a towel the mushrooms, then I sliced.
I put in a saucepan the onion, carrot, celery, potato and half the mushrooms with a little olive oil.
I left to soak 5 minutes, then I poured over the vegetables 2 liters of boiling water. I let simmer one hour.
Meanwhile I baked the other mushrooms on the grill on one side and another.
When the vegetables were cooked I blended them. We served the soup with croutons and grilled mushrooms.
